Kalita Wave

What is a Kalita Wave? Kalita Wave coffee is a pour-over brewing method that uses a flat-bottomed dripper with wave-shaped ridges to promote even extraction. This method is known for its consistency and ease of use, making it a favorite among both beginners and experienced coffee enthusiasts.

How It Works

  • Ground coffee is placed in a flat-bottom paper filter inside the Kalita Wave dripper.

  • Hot water is poured over the coffee in a controlled manner, allowing the brewed coffee to flow through three small holes at the bottom and into a cup or carafe.

  • The flat-bottom design helps create an even coffee bed, leading to a balanced and consistent extraction.

Kalita Wave Coffee Recipe

Ingredients:

  • Freshly roasted coffee beans.

  • Filtered water.

Equipment:

  • Kalita Wave dripper.

  • Kalita Wave paper filters.

  • Burr grinder.

  • Gooseneck kettle.

  • Measuring scale.

  • Timer.

Steps to Make A Kalita Wave:

  1. Measure Your Coffee and Water: Use a ratio of 1:15 to 1:17 coffee to water by weight. For example:

    • For 300 grams (10 ounces) of water, use 20 grams (about 2.5 tablespoons) of coffee.

  2. Grind Your Beans: Grind your coffee to a medium consistency, similar to granulated sugar. This ensures even water flow and extraction.

  3. Prepare the Kalita Wave:

    • Place the Kalita Wave dripper on top of your cup or carafe.

    • Insert a paper filter and rinse it with hot water to remove any papery taste and preheat the dripper. Discard the rinse water.

  4. Add Coffee Grounds: Place the measured coffee grounds into the filter and level them for even water distribution.

  5. Bloom: Start your timer and pour just enough hot water (195°F to 205°F) to saturate the grounds. Allow the coffee to bloom for 30-45 seconds as it releases gases and expands.

  6. Brew:

    • Pour the remaining water in a slow, controlled circular motion, starting from the center and spiraling outward.

    • Divide the pouring into stages, allowing the water to settle before adding more, to maintain an even flow rate.

    • Aim to finish pouring within 2-3 minutes.

  7. Finish Brewing: Allow the water to drain completely through the filter. The total brewing time should be about 3-4 minutes.

  8. Serve: Swirl the brewed coffee in the carafe to mix evenly, then pour into your cup and enjoy.
