What is a Chemex? Chemex coffee is a pour-over brewing method that uses a uniquely designed glass brewer and thick paper filters. Known for its elegant design, the Chemex produces a clean, crisp, and aromatic cup by emphasizing clarity and highlighting the coffee’s delicate flavors.

How It Works

  • Ground coffee is placed in a thick paper filter inside the Chemex.

  • Hot water is poured over the coffee grounds in stages, allowing the brewed coffee to drip through the filter and collect in the carafe below.

  • The thick filter removes most oils and fine particles, resulting in a clean and refined flavor profile.

Chemex Coffee Recipe

Ingredients:

  • Freshly roasted coffee beans.

  • Filtered water.

Equipment:

  • Chemex brewer.

  • Chemex paper filters.

  • Burr grinder.

  • Gooseneck kettle.

  • Measuring scale.

  • Timer.

Steps to Make Chemex Coffee:

  1. Measure Your Coffee and Water: Use a ratio of 1:15 to 1:17 coffee to water by weight. For example:

    • For 500 grams (16 ounces) of water, use 30 grams (about 4 tablespoons) of coffee.

  2. Grind Your Beans: Grind your coffee to a medium-coarse consistency, similar to kosher salt. This ensures even extraction without clogging the thick filter.

  3. Prepare the Chemex:

    • Place the paper filter in the Chemex, ensuring the triple-fold side faces the spout.

    • Rinse the filter with hot water to remove any papery taste and preheat the brewer. Discard the rinse water.

  4. Add Coffee Grounds: Place the measured coffee grounds into the filter and level them for even water distribution.

  5. Bloom: Start your timer and pour just enough hot water (195°F to 205°F) to saturate the grounds. Let the coffee bloom for 30-45 seconds as it releases gases and expands.

  6. Brew: Slowly pour the remaining water in a circular motion, starting from the center and moving outward. Maintain a steady flow to ensure even extraction.

    • Pour in stages if needed, allowing the water to drip through before adding more.

  7. Finish Brewing: The total brew time should be around 4-5 minutes. Once the water has drained completely, remove the filter and discard it.

  8. Serve: Swirl the Chemex to mix the coffee evenly, then pour and enjoy.
